Self-custody puts key management and recovery in the user's hands. Custodial service adds dependence on a provider; it may simplify operation but does not transfer all your risks to that provider. The provider manages keys; the app balance is its record. Executing a withdrawal depends on its processes, terms and availability. Proof of Reserves may demonstrate selected assets at a particular moment. It may not include all liabilities, encumbrances or client rights and is not a solvency guarantee.

Running BTCPay Server yourself involves deployment choices, maintenance and support; hosting and custody of funds are separate questions. Trading through Bisq has counterparty, payment and dispute rules; P2P does not mean an absence of conditions or risks.
